flan

INGREDIENTS:
For the flan:
1 can condensed milk (14 oz)
1 can of evaporated milk (12 oz)
4 eggs
1 bar of cream cheese (8 oz)
1 tsp vanilla extract
½ cup shaved coconut(optional)
For the caramel:
1 cup granulated sugar
¼ cup water
1 tbs lemon juice
INSTRUCTIONS:
1. Mix all the ingredients for the caramel un a microwave friendly bowl.
2. Put the bowl in the microwave for 5 minutes or until the caramel is an amber color. Careful not to burn it.
3. Carefully, caramelize a round 9” pan by spreading the caramel throughout the pan. Let the caramel harden.
4. Preheat the oven at 350°.
5. While the caramel hardens, mix the milks, the eggs, the cream cheese and the vanilla extract in a bowl (for best results use an electric blender).
6. Once the caramel is hard, spread the coconut at the bottom of the pan.
7. Pour the mix in the caramelized pan.
8. Prepare a Bain Marie* where you will pun the pan in the oven for 30-45 minutes or until the flan stops jiggling like Jell-O.
9. Let it cool down and store in the fridge at least an hour.
