ensalada de coditos
Prep: 10 minutes | Cook: 10 minutes | Yield: 8 servings
INGREDIENTS:
1 box of macaroni (or whatever pasta you want)
1½ cup of mayonnaise ( more or less to taste)
4 boiled eggs, chopped
¼ cup chopped red bell pepper
12 minced olives (more or less to taste)
2 grated carrots
1 white onion, diced
2 tbsp olive oil
4 tbsp white vinegar
Salt and pepper to taste
INSTRUCTIONS:
1. Boil pasta and drain when al dente.
2. Remove the water and add some olive oil so it doesn't stick while it cools to room temperature.
3. In a large bowl, mix the macaroni, mayonnaise, eggs, red pepper, carrots, olives, and onion(If you need more mayonnaise, you can add more until it is as creamy as you want it).
4. Add the oil and vinegar (you can add more vinegar to taste)
5. Add salt and pepper to taste.
6. Serve right away or put it in the fridge until it’s cold.
