Quesitos


Time: 35 minutes | Yield: 8 quesitos


INGREDIENTS:

2 sheets frozen puff pastry dough

1 (8 oz) bar of cream cheese

1 egg yolk

1 tbsp water

8 tsp sugar

Flour for counter surface

For the glaze:

½ cup water

1 cup sugar

¼ cup honey

INSTRUCTIONS:

1. Preheat the oven to 400°F. On a floured surface, roll out the two sheets of puff pastry dough into two 12” x 12” squares and cut them into a 2x2 grid. Prepare an egg wash in a small bowl by whisking together an egg yolk and 1 tbsp of water. Cut the block of cream cheese into 8 rectangular pieces.

2. To assemble the quesitos, place one rectangle of cream cheese on the square of puff pastry in line with the diagonal but off center toward one corner. Sprinkle 1 tsp of sugar over the cream cheese, then fold the nearest corner over the cream cheese. Fold the two opposing corners in towards the center, then roll the quesito towards the last corner the way you would make an egg roll or a burrito (see the diagram below). Use a pastry brush or a piece of paper towel to dab some egg wash on the pastry to make sure the folds stick.

3. Place the quesitos on a parchment paper-lined baking sheet, brush them with egg wash, then poke vents in the top of each one using a fork. Bake for 15-20 minutes until golden.

4. While the quesitos bake, prepare the glaze. Mix the water, sugar, and honey in a small saucepan and simmer until it thickens. Cover it and keep the glaze warm on the stove until the quesitos are done. Allow the quesitos to cool for 5 minutes and then brush them with 2 layers of glaze. Serve with some fresh coffee or however you like.
