Pastelillos de Guayaba
Time: 25 minutes | Yield: 2 large, 8 medium, or 18 small pastelillos
INGREDIENTS:
1 sheet of frozen, ready-to-bake puff pastry
½ cup of guava paste
2 tbsp of water
Powdered sugar for dusting
Flour for surface
INSTRUCTIONS:
1. Thaw the puff pastry and unfold it onto a floured surface. Roll the dough into a 12” x 12” square. Cut into a 2x2 grid for large pastelillos, 4x4 for medium ones, or 6x6 for bite-sized pastelillos (see diagram below for measurements). Separate the pieces and bake at 400°F for 12-15 minutes or until puffed and lightly golden.
2. Combine the guava paste and water in a bowl, microwave for 30-45 seconds, and stir to combine into a thick, molasses-like consistency. If it’s too thick add a bit more water, and if it’s too runny return it to the microwave for a few more seconds or stir in more guava paste.
3. Once the pastry cools down from the oven, spoon the guava mixture onto half of the squares and sandwich another square on top. Dust the top with powdered sugar and serve.
