This all started because I was homesick—I learned to cook as a way to transport myself back to Puerto Rico. What has become my “style” evolved out of necessity, using whatever ingredients I could find nearby and spending what little time I had in the kitchen after class and work. So I learned traditional recipes, but allowed myself to cut a few corners every now and then. Because as long as it still tastes the same, the ancestors don’t have to know.
